Cilantro Lime Tilapia

This is a super easy recipe to prepare even on a weeknight.  And it was delicious!

4 tilapia fillets
1 cup chopped cilantro
3 tbsp smart balance spread or butter
1 tbsp good olive oil
6 cloves of garlic, minced
1/4 tsp salt
1/2 tsp black pepper
juice of 1/4 lime
Sprinkle both sides of the fish in the pepper and salt. Spray the casserole dish and/or the frying pan with non-stick spray, thoroughly. You will want to preheat the oven to 425 degrees.
In the medium sauce pan, melt the butter and olive oil over medium heat. Saute the garlic until fragrant. Add the cilantro and lemon juice to the sauce pan and stir well. Remove the sauce pan from heat.
Bake the fish or fry the fish until it flakes easily with a fork. Once the fish is done, serve it over a bed of rice or greens topped with the cilantro sauce. You can also pre marinade the fish in lime juice before baking, this will impart a strong lime flavor.
